Copycat Panera: Cobblestone Muffins
INGREDIENTS

For the dough:

2 cups all-purpose flour

4 teaspoons baking powder
•
1 1/2 teaspoons cinnamon

1 1/4 teaspoons salt

1 cup buttermilk
•
1/3 cup oil
•
2 teaspoons vanilla
•
2 eggs
•
Raisins (according to preference – I would recommend 1/3 cup)

For the filling:
•
2 tablespoons unsalted butter
•
3-4 Granny Smith apples, peeled, cored, and sliced
•
3 tablespoons brown sugar
•
1/4 teaspoon salt
•
2 teaspoons pumpkin pie spice
•
1 tablespoon lemon juice
•
For the streusel:
•
1/4 cup butter, room temperature
•
1/4 cup brown sugar
•
1/2 cup flour
