Try these crisp and delicious patties with any fish you like. You cal also use canned or leftover fish instead of starting from scratch. Just sub 2 large cans of salmon or tuna, drained, or 2 cups of flaked cooked fish for the cod.

1 lb cod, cut into large chunks

½ tsp salt

¼ c + 2 Tbsp 2% greek yogurt

¼ c chopped fresh parsley

1 egg yolk, beaten

1 Tbsp Dijon mustard

1 Tbsp freshly squeezed lemon juice (from ½ lemon)

¾ c + 2 tbsp panko or bread crumbs

3 scallions, minced
•
¼ tsp freshly ground black pepper
