•3/4 cup butter OR margarine, softened, cut into 12 pieces
•3/4 cup dried coconut, crumbled**
•FILLING/ICING:
•8 ounces cream cheese, room temperature
•8 ounces Mascarpone cheese, room temperature
•2 teaspoons Spice Islands® Pure Vanilla Extract
•2/3 cup powdered sugar
•1 cup heavy whipping cream
•1/2 cup shredded coconut
•2/3 cup seedless raspberry jam OR preserves
•2 cups shredded coconut
