INGREDIENTS
Almond-Coconut Crust
2 cups (180 grams) almond flour
1 cup (90 grams) unsweetened shredded coconut
1/3 cup vanilla whey protein powder (or your preferred)
1/3 cup erythritol (or your favorite powdered sweetener)
6 tablespoons salted butter, melted
Coconut Pudding
1 recipe Vanilla Pastry Cream but sub canned coconut milk for the liquid and add 1 teaspoon of coconut extract along with the vanilla
Cream Cheese Filling
8 ounces cream cheese, softened
1/4 cup erythritol, powdered (or stevia to taste)
Whipped Cream Topping
2 cups heavy cream
1/4 (or stevia to taste)
1 teaspoon vanilla
Optional Coconut Topping
