1/2 cup all-purpose flour

1 tablespoon paprika

1 teaspoon cayenne pepper

1/2 cup milk
•
1 egg
•
1/2 stick unsalted butter, melted
•
1 small bunch scallions, grilled and chopped
•
1 cup corn kernels, grilled and fresh cut from the cob or frozen
•
Sea salt
•
For the dipping sauce:
•
1/4 cup crumbled Cortija cheese (crumbled feta or shredded Parmesan cheese can be substituted)
•
1/2 cup mayonnaise
•
1/2 cup sour cream
•
1 1/2 teaspoons Tabasco
•
Salt and pepper to taste
