INGREDIENTS

1 large red onion, chopped

1 tbsp. coconut or olive oil (I used coconut)

1 lb. lean, ground turkey
•
1 (15 oz.) can black beans (do not drain/rinse)
•
2 large tomatoes, coarsely chopped
•
2 cups frozen, organic corn
•
1 medium red bell pepper, chopped
•
2 tbsp. garlic powder
•
2 tbsp. onion powder
•
2 tbsp. chili powder
•
2 tbsp. ground cumin
•
3/4 lb. whole grain rotini pasta (I used brown rice fussili – almost the same thing)
•
Salt and pepper to taste

Chopped fresh cilantro for garnish
