35 g (2 1/2 tbsp) unsalted butter, optional
55 g (7 tbsp) plain flour (cake flour)
55 g (7 tbsp) potato flour (potato starch)
3/4 tsp baking powder
4 eggs
110 g ( 1/2 cup) caster (superfine) sugar
