1/4 cup flour
2 oz unsalted butter
1/2 cup whole milk ((125 g = 1/2 cup))
1/2 cup water ((125 g = 1/2 cup))
4 oz unsalted butter
1/4 tsp granulated sugar
1/4 teaspoon kosher salt
1 cup all-purpose flour ((1 cup = 140g all-purpose flour))
5 large eggs (at room temperature)
4 oz chocolate (chopped)
3 oz unsalted butter
2 tbsp water
2 tbsp corn syrup
Mint leaves (washed, dried)
1 egg white
1/8 tsp salt
granulated sugar
