Classic Collards

INGREDIENTS
Fresh or bagged collards (your preference)
Beef broth (2 to 3 cups)
Meat of choice ham hock, neck bone, sausage or bacon
1 whole sweet onion or red onion (chop in quarter size pieces, it better for tasting once dish is prepared)
salt & pepper (season to taste)
minced garlic (however much you like)
crushed red pepper (1/2 teaspoon)
brown sugar (up to 3 tablespoons)
white granulated sugar (up to 3 tablespoons)
apple cider vinegar (1/4 cup)
