1/2 pound Napa cabbage (about 1/4 head, plus extra leaves for lining the steamer)
1/2 pound ground pork
1/2 bunch scallions (green and white parts, finely chopped)
1/2 cup chopped garlic chives
1 clove garlic (large, finely chopped)
1 1- inch knob fresh ginger (grated)
3 tablespoons soy sauce
1/2 teaspoon Asian sesame oil
Dipping Sauce:
1/4 cup soy sauce
2 tablespoons rice vinegar
1 teaspoon scallions (white part only, thinly sliced)
1/4 teaspoon toasted sesame seeds
1/2 teaspoon freshly ground black pepper
