INGREDIENTS
1-1/4 lbs boneless, skinless chicken thighs
Salt and freshly ground black pepper
2 tablespoons olive oil
1/2 cup onion, chopped
1 jalapeño pepper, seeded and chopped
2 cloves garlic, very finely chopped
2 teaspoons chili powder (or more to taste)
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons Tabasco Chipotle Pepper Sauce (optional)
2 cups tomato sauce
3/4 to 1 cup finely shredded cheese (Monterey Jack or a Mexican blend)
1/2 cup fresh cilantro, chopped
