4 egg yolks, reserve 1 egg white for egg wash and 1 egg white for cinnamon filling

1 tsp kosher salt
1 cup dark brown sugar
1/4 cup all purpose flour
3 tsp ground cinnamon
1/2 tsp kosher salt
2 tbsp unsalted butter, melted
1 egg white
1/4 cup dark brown sugar
1/4 cup all purpose flour
2 tbsp unsalted butter, cold and cut into small pieces
1/4 tsp salt
