1 cup white sugar 1 1/2 cup shredded apples 1 egg 1 tsp vanilla 2 1/2 cups white unbleached flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1 cup chopped nuts (measured after chopped)

NOTE: for top of cookies: mix 2 tbls sugar & 2 tsp cinnamon
