Chunky Vegetable and Spinach Soup - Lord Byron's Kitchen

INGREDIENTS
2 tablespoons olive oil
1 large onion, (finely chopped)
2 cloves garlic, (minced)
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon ground black pepper
2 whole bay leaves
4 large carrots, (peeled and sliced into 1/4 inch rounds)
4 stalks celery, (sliced 1/4 inch thick)
1 large rutabaga, (peeled and cut into 1 inch cubes)
3 large potatoes, (peeled and cut into 1 inch cubes)
1 large butternut squash, (peeled and cut into 1 inch cubes)
4 cups vegetable stock
4 cups water
4 cups baby spinach leaves, (washed)
