Christmas Cake - Traditional British Fruit Cake with Royal Icing

INGREDIENTS
200g (1 1/2 c) all purpose flour
1/4 tsp salt (omit if using salted butter)
1 1/2 tsp mixed spice
200 g (1 Tbsp less than 1 cup or 2 sticks) butter
200 g (3/4 cup plus 1 Tbsp) sugar
6 eggs
3 Tbsp brandy 
100 g (about 3/4 c) chopped, glacé cherries
50 g (about 1/4 c) chopped, candied/preserved ginger
50 g (walnuts (optional)
200 g (1 1/3 c) currants
200 g (2 c) sultanas
150 g (1 1/4 c) raisins
mixed peel (or fresh orange peel with sugar - see below)
For the decoration
small jar of apricot jam
7 oz pkg marzipan (almond paste)
