3 lbs chili meat (2 lb Venison Chili or Elk Chili, 1 lb Wild Boar Chili)

2 tbsp cooking oil

1 12-ounce can/bottle beer (preferably ale)
•
1 large onion, chopped
•
3 cloves garlic, finely chopped
•
1 jalapeno pepper, finely chopped
•
2 chipotle peppers canned in adobo sauce, chopped
•
1 tbsp adobo sauce (from the chipotle peppers in adobo)
•
1 tbsp tomato paste
•
5 tbsp chili powder
•
4 tsp ground cumin seed
•
1 tbsp paprika
•
1 tsp salt
•
¼ tsp black pepper
•
2 tsp cornstarch (optional)
