Chorizo and chickpea soup

INGREDIENTS
2 tbsp (30 mL) olive oil
250 g pkg chorizo sausages, diced
2 cloves of garlic, finely chopped
1 onion, finely chopped
6 cups (1.5L) low sodium chicken stock
796 mL can diced tomatoes
540 mL can chickpeas, drained and rinsed
2 large potatoes, peeled and diced
1 tbsp (15 mL) chopped fresh thyme, or 1 tsp dried thyme leaves
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
8 cups (2 L) baby spinach leaves
1/2 cup to 1 cup (125 mL to 250 mL) grated Parmesan cheese
