Chocolate Mocha Mousse

INGREDIENTS
100 g dark chocolate (minimum 70% cocoa solids)
2 eggs, separated
1 tablespoon dark rum
1 heaped teaspoon coffee granules
50 ml double cream
1 level dessertspoon coffee granules, dissolved in dessertspoon water
50 g dark chocolate, grated
