INGREDIENTS

5-6 hard boiled eggs (or 15 to 20 hard boiled quail eggs)

1 tablespoon loose tea leaves (or 2 tea bags)
•
1 tablespoon light soy sauce
•
1 tablespoon dark soy sauce
•
1 tablespoon rock sugar
•
3 pieces whole star anise
•
1 stick cinnamon
•
1 teaspoon peppercorns (Sichuan if you can find that)
•
3 slices fresh ginger
•
3 bay leaves
•
1/2 teaspoon salt
