Tex-Mex is basically Texas-influenced Mexican food. These Chile con Carne Enchiladas at the ultimate Texas comfort food. This is what we ate all of the time while living in Texas for 3 years. INGREDIENTS
1 lb. Ground Beef
3 Tablespoons Chili Powder
2 teaspoons Paprika
1 teaspoon Cumin
1/2 teaspoon Garlic Powder
1 teaspoon Salt
1 teaspoon Pepper
1 cup Crushed Tomatoes or Tomato Puree
1 cup Beef or Chicken Broth
2 Tablespoons Cornstarch ((mixed with 1 cup of water before adding))
3 Tablespoons Oil
12 Corn Tortillas
3-4 cups Cheddar Cheese ((medium or sharp))
1/4 White Onion ((diced))
Cilantro ((chopped))
