"Think reverse nachos—but better...."

INGREDIENTS
3tablespoons good-quality olive oil
1pound ground chicken
Salt and pepper
1onion, chopped
3cloves garlic, peeled and chopped
3poblano chiles, trimmed, cored, seeded, and sliced
2medium ripe tomatoes, cored and chopped
2teaspoons ground cumin
12ounces Oaxaca cheese or low-moisture mozzarella, grated (1 ½ cups)
Several sprigs fresh cilantro, chopped
Tortilla chips or warm flour or corn tortillas, for serving
1lime, quartered
