INGREDIENTS
36 ounces (or 4 and 1/2 cups) low-sodium chicken broth
1 (14.5 ounce) can petite diced tomatoes
3/4 cup finely chopped yellow onion
4 teaspoons minced garlic
2 and 1/2 teaspoon chili powder
1 and 1/2 teaspoon ground cumin
3/4 teaspoon paprika
Salt and black pepper, to taste
1 pound boneless, skinless chicken breasts (raw)
1 (14.5 ounces) can black beans, drained and rinsed
1 and 1/2 cups corn (canned or fresh)
1/4 cup chopped fresh cilantro
1 Tablespoon lime juice
For the tortilla strips
10 (6-inch) corn tortillas
1 tablespoon vegetable oil
2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
Optional garnish, Shredded cheddar cheese, diced avocado, diced roma tomatoes, sour cream
