Chicken, Spinach & Artichoke Minestrone

INGREDIENTS
¾ cup uncooked Orzo or small soup style pasta
2 tbsp olive Oil
1 tbsp butter
1 lg onion chopped
4 cloves garlic, minced
1-14 oz can small white beans, drained (great northern)
4  cups cooked chicken, shredded or cubed
1- 15 oz can artichokes quartered
1-10 oz pkg frozen spinach
1- 4 oz can fire roasted crushed or diced tomatoes*
2-3 quarts chicken broth
¾ cup sherry
½ tsp salt
½ tsp pepper
½ tsp crushed red pepper flakes* (more if preferred)
Optional - Parm cheese rind, mushrooms, or sub tortellini
