3 roasted red peppers – I used 1 Jar from TJ’s, drained and chopped

1/4 chopped medium red onion

2 tablespoons chopped cilantro or garnish with cilantro

4-5 Persian cucumbers sliced

1/3 cup crumbled feta + more for garnish

1/2 cup golden raisins (feel free to sub regular raisins)
