INGREDIENTS

4 cups of homemade IP chicken broth. (I used frozen)

2 carrots cubed
•
2 celery cubed
•
2 medium russet potatoes cubed
•
Leftover chicken ..deboned and cubed.( I used 2 thighs and 3 drums)
•
Salt and pepper to taste
•
Roux..to thicken the broth
•
4 tablespoons butter, 4 tablespoons flour cooked together in a small saucepan
•
Pot In Pot White Rice ( I used a 7”x3” cake pan )
•
2 cups of well rinsed rice
•
2 cups of water
•
A pinch of salt
•
1 capful of white vinegar
