For the Gravy:

1/4 cup finely chopped shallots or onions

1 teaspoon minced garlic
•
3 tablespoons all-purpose flour
•
1/2 cup milk
•
1 1/2 cups chicken or beef stock
•
pinch of cayenne
•
salt and pepper to taste
