1 tablespoon onion powder
3 (23 ounce) cartons unsalted chicken stock, divided use
1 ¼ cups corn flour ((masa harina))
10 ounce can red enchilada sauce
1 cup shredded Monterey Jack cheese,
1 cup shredded sharp cheddar cheese,
tortilla strips
fresh chopped cilantro
sour cream
shredded Monterey Jack and sharp cheddar cheeses
