Chicken Chow Mein (Hong Kong Style) - CJ Eats Recipes

INGREDIENTS
1 lb chicken thigh (cut into 2" long thin slices (1/4" thick))
1/2 tbsp light soy sauce (low sodium)
1/4 tsp white pepper
1/2 tsp kosher salt
1/2 tbsp cornstarch
1 lb fresh chow mein noodles (12 oz if using dry noodles)
2 cups baby bok choy
5 oz mushrooms (I used oyster, seafood, and beech)
1/4 cup onion (sliced)
2 scallions (cut to 2" pieces)
3 oz carrot (cut into 1" disks)
5 cloves garlic (minced)
1 inch ginger (minced)
2 cups high quality chicken stock
1 tbsp oyster sauce
1 tbsp light soy sauce (low sodium)
1 tsp sesame oil
1/2 tsp white pepper
1/2 tsp MSG (optional)
1 tsp sugar
1 tbsp shaoxing wine
1 tbsp cornstarch
1/2 cup water
