½ lb sausage ((Andouille or other smoked sausage), sliced)
2 onions, (diced)
2 celery stalks, (diced)
1 green pepper, (cored, seeded and diced)
4 c chicken stock, (low sodium or homemade)
½-1 tsp red pepper flakes ((depending on your heat preference))
1/8 tsp cayenne pepper ((optional))
½ tsp salt
2 c long grain white rice, (dry)
