1 cup onion, diced
1 cup carrot, diced
1 cup celery, diced
3 cloves garlic, chopped
2 teaspoons thyme, chopped (or 1 teaspoon dried thyme)
8 cups chicken broth or chicken stock
1 pound boneless and skinless chicken breasts or thighs*
2 bay leaves (optional)
1 cup jasmine rice (or other long grained rice)
1 tablespoon lemon juice
1 tablespoon parsley, chopped (optional)
salt and pepper to taste
