4 bone-in, skin-on split chicken breasts (about 3 pounds)
Salt and pepper
2 teaspoons vegetable oil
2 onions, chopped fine
6 garlic cloves, minced
12 ounces white mushrooms, sliced thin
4 large portobello mushroom caps (about 12 ounces), gills removed, halved and sliced thin
1 tablespoon minced fresh thyme
¼ cup all-purpose flour
1 cup low-sodium chicken broth
1 cup low-sodium beef broth
1 cup white wine
⅓ cup heavy cream
4 teaspoons lemon juice
2 tablespoons chopped fresh parsley
