Cherry Almond Sourdough Biscotti

INGREDIENTS
1 1/4 cup unbleached all purpose flour
1/2 cup (135 grams) 50% hydration sourdough starter, active
2 eggs
zest from 1 small lemon
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
3/4 teaspoon ground cardamom
3/4 teaspoon salt
3/4 cup brown sugar
4 Tablesooons room temperature unsalted butter
1 cup sliced almonds
1 cup dried cherries, chopped
8 oz white chocolate melting discs
