half of one medium sized yellow onion, chopped (about ? cup)

1 large bell pepper, chopped (I used orange)

1-10 ounce package of frozen chopped spinach, thawed and drained

2 cloves garlic, chopped

4 large eggs
•
2 large egg whites
•
1 cup milk (I used skim)
•
½ teaspoon salt
•
¼ teaspoon freshly ground black pepper
