INGREDIENTS
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 green pepper, diced
1 cup frozen corn kernels
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can pinto beans, drained and rinsed
1 (15-ounce) can dark red kidney beans, drained and rinsed
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper or more to taste (optional)
2 cups (16 ounces) jarred chunky-style salsa
8 to 9 cups (about 7 ounces) corn tortilla chips
1 1/4 cups shredded cheddar cheese
1 1/4 cups shredded pepper jack cheese
