Cheesy Sausage Stuffed Mushrooms
INGREDIENTS

24 white button mushrooms, about 1 1/2 – 2-inches in diameter

1 pound Italian sausage, sweet or hot
•
2 tablespoons olive oil
•
2 tablespoons unsalted butter
•
1 medium onion, finely chopped
•
2 cloves garlic, finely minced
•
1/4 cup plus 2 tablespoons sweet Marsala wine (Use a real wine, not cooking wine.)
•
4 ounces (1/2 cup) mascarpone
•
1/2 cup panko crumbs
•
2/3 cup grated Parmesan cheese
•
2/3 cup shredded Asiago cheese
•
Salt and pepper to taste
•
1/2 cup shredded mozzarella cheese
