3 tbsp reserved bacon grease or olive oil

½ white onion, diced

1 red bell pepper, seeded and diced
•
6 cups spinach
•
salt and pepper
•
8 large eggs, whisked
•
½ cup milk
•
½ cup shredded sharp white cheddar cheese or gruyere
