⅓ cup Sugar

2 tablespoons Shaoxing cooking wine

2 tablespoons oyster sauce

½ teaspoon 5-spice powder

1 ½ tablespoons maltose (or honey)

3 lb pork shoulder*
•
*For a great balance of fat and lean, go for shoulder. If you want extra lean, get yourself pork tenderloin. If you want to go for broke, get pork belly.
