This is one of Dad's favorite desserts. I found this recipe in a pamphlet at a rest area in Virginia on one of our many family trips.

Ingredients For peanut pudding dessert

  • LAYER 1
  • 2/3 c
    peanuts, chopped
  • 1 c
    flour
  • 1/4 c
    confectioners' sugar
  • 1/2 c
    butter
  • LAYER 2
  • 1/2 c
    peanut butter, creamy
  • 1-8oz pkg
    cream cheese
  • 3/4 c
    confectioners' sugar
  • 3 c
    cool whip
  • LAYER 3
  • 1 pkg
    instant vanilla pudding(small)
  • 1 pkg
    instant chocolate pudding(large)
  • 3 c
    milk
  • 1/4 c
    peanuts, chopped

How To Make peanut pudding dessert

    Layer 1: Mix the flour and sugar together. Using a fork mix the butter into the flour mixture until crumbly, add the peanuts and mix. Press into a prepared 9"X 13" baking dish. Bake at 350 for 20 minutes, cool.

    Layer 2: In a mixing bowl, add the peanut butter, cream cheese, and powdered sugar and mix, add the cool whip, mix. Spread on cooled crust.

    Layer 3: In a medium bowl, mix the pudding mixes together and then add the milk, stir for about a minute with a whisk. Spread on layer 2.

    Layer 4: Spread a layer of cool whip on top of layer 3 and then sprinkle with more peanuts. Cover and chill until ready to serve.
