Good pinch of saffron

6 plum tomatoes, diced

1 bay leaf

3/4 cup peas, fresh or frozen (175 ml)

16 shrimp, peel removed, tail on (about 3/4 pound/ 341grams)
•
16 mussels, cleaned (about 1 pound/454 grams)

1/4 cup chopped fresh parsley (60 ml)

Coarse salt and freshly cracked black pepper, to taste

Extra chicken stock, if needed
