CC's Paella

INGREDIENTS
1/3 cup olive oil (75 ml)
4 chicken pieces, thigh or leg, on the bone
1 chorizo sausage, sliced
1 small onion, chopped
2 clove of garlic, minced
1 small red bell pepper or pequillo pepper
1 cup Spanish style rice or medium grain rice (250 ml)
1/4 cup sherry (60 ml)
1 1/2 cup to 1 3/4 cup chicken stock (375 ml to 425 ml)
Good pinch of saffron
6 plum tomatoes, diced
1 bay leaf
3/4 cup peas, fresh or frozen (175 ml)
16 shrimp, peel removed, tail on (about 3/4 pound/ 341grams)
16 mussels, cleaned (about 1 pound/454 grams)
1/4 cup chopped fresh parsley (60 ml)
Coarse salt and freshly cracked black pepper, to taste
Extra chicken stock, if needed
