The Pastry Cream Filler
2 cups whole milk
2 cups heavy cream
1 cup sugar
4 whole eggs
4 egg yolks
1 vanilla bean
2 tablespoons cornstarch
The Castagnole
1 1/2 cups all purpose flour
1/4 cup sugar
a pinch of salt
1 teaspoon baking powder
1/3 cup melted butter at room temperature
2 large eggs, lightly beaten
2 tablespoons of rum
the zest of half a lemon, finely chopped
frying oil
powdered sugar to dust the castagnole
makes 60-80 depending on size
