INGREDIENTS
For the Cake: 2 cups all-purpose flour

3 cups grated carrots 1 cup coarse
1 cup coarsely chopped walnuts
1 cup shredded coconut (sweetened or unsweetened)
½ cup raisins
2 cups granulated sugar
1 cup canola oil
4 eggs
For the Frosting:
8 ounces cream cheese, at room temperature
4 ounces (½ cup) unsalted butter, at room temperature
1 pound (3¾ cups) powdered sugar
1 tablespoon vanilla extract
