INGREDIENTS
Ingredients
1 package frozen potato pierogies
Salt and freshly ground black pepper
5 tablespoons butter, divided
2 tablespoons extra virgin olive oil (EVOO)
6 boneless, skinless chicken thighs, cut into 4 chunks
2 boneless, skinless chicken breasts, cut into 6 chunks
1/4 cup flour (eyeball it)
2 tablespoons smoked paprika
1/2 small green cabbage, core removed and discarded, leaves cut into 1- to 1 1/2-inch pieces
3 ribs celery, thinly sliced on an long angle
2 medium carrots, thinly sliced on a long angle
1 large onion, thinly sliced
1 fresh or dry bay leaf
1/2 cup pickle juice from whatever kind of pickles you keep in your fridge (eyeball it)
1 can o’ beer, your favorite pale ale or lager, whatever kind you keep in the fridge
2 tablespoons spicy brown mustard, recommended Gulden's brand (eyeball it)
3 sprigs fresh dill, roughly chopped
1/4 cup (about a handful) flat leaf parsley leaves, roughly chopped
