I grew up eating vegetable beef soup, although there was never a recipe. It has taken me years to develop this recipe, through trial and error, of course. I started adding sugar after eating Mom Burgess' soup because that is how she made it and it does make a difference. I started adding ketchup after tasting the school's recipe and liking the way it tasted. So, this soup is ever evolving, enjoy, add your own flavors and make it your own.

Ingredients For vegetable beef soup

  • 1 1/2 lb
    ground beef or soup meat
  • 1
    onion, diced
  • 1 qt
    tomatoes, pulsed in blender
  • 2 c
    mixed vegetables, frozen
  • 1/4
    cabbage, chopped
  • 4 c
    water
  • 2 tsp
    beef bouillon "better than boullion"
  • 1/4 c
    ketchup(optional)
  • 2 tsp
    sugar
  • 1 tsp
    salt
  • pepper to taste
  • 2-4
    potatoes, cut up

How To Make vegetable beef soup

  • 1
    Brown the ground beef or soup meat in a large pot. Add remaining ingredients all accept the potatoes. Stir, bring to a boil, cover, turn down to a simmer and let simmer about an hour.

    Add potatoes, stir, cover and simmer until potatoes are done. This is also the time to taste the soup to see if you need anymore salt, etc.
