INGREDIENTS
4 tbsp ghee, butter, or oil of choice
1 large onion, roughly chopped
1 heaping tsp of minced or grated garlic
2 carrots, peeled and roughly chopped
1 medium potato, peeled and roughly chopped (can use either white or sweet)
1/2 cup of butternut squash, peeled and roughly chopped
2 cups red lentils
1 large or 2 small tomatoes, roughly chopped
1 tsp ground cumin
1 tsp ground turmeric
1/2 tsp ground coriander
4 cups chicken or vegetable stock
5 cups water
salt and pepper to taste
FOR THE PITA CHIPS
12 mini whole wheat pitas or 2-3 loaves of whole wheat pita bread torn into pieces
olive oil
sea salt
1/4 - 1/2 tsp garlic powder (depending on how much garlic you like)
