INGREDIENTS

1 pound fresh chorizo (or ground turkey, or ground chicken)

1 onion, diced

1 bell pepper, diced (optional)

4 cloves garlic, chopped

2 chipotle chiles in adobo, chopped (or 1 tablespoon chipotle chili powder)

1 tablespoon ground cumin
•
1 tablespoon smoked paprika
•
1/2 teaspoon cinnamon (optional)
•
2 cups chicken broth (or vegetable broth)
•
4 cups butternut squash, cut into 1 inch cubes
•
1 (15 ounce) can diced tomatoes
•
1 (15 ounce) can white kidney beans, drained and rinsed
•
1 teaspoon oregano
•
