1 large onion, chopped
1 large Russet potato, peeled and cubed

8 cups chicken or vegetable broth
2 bunches fresh broccoli including tender stem, coarsely chopped plus 1 large broccoli crown, separated into florets, divided
Salt and freshly ground black pepper, to taste
1/2 cup heavy cream
2 cups grated Gruyere cheese, packed plus more for topping soup if desired
CROUTONS
1 small sourdough baguette, torn into pieces
1/4 cup olive oil
4 tablespoons butter, melted
2 teaspoons garlic powder
Salt and freshly ground black pepper, to taste
