1/2 cup bleached all-purpose flour
1/4 teaspoon cayenne
5 cups milk
8 ounces Cheddar cheese, shredded (about 2 cups)
1 cup fine dried bread crumbs
2 teaspoons Emeril's Original Essence or
Creole Seasoning
1/4 cup extra-virgin olive oil
