INGREDIENTS
2 tablespoons lard (or butter, or olive oil)
1 small onion, minced (about ½ cup)
1 teaspoon dry thyme leaves
12 ounces lean beef, minced
1 tablespoon mustard powder (I used Colman's brand)
3 ounces beef stock
salt and freshly ground black pepper
1 recipe flaky pastry (or two pie crusts or two sheets puff pastry)
2 large eggs, beaten
