Printed on the back package of Bob's Red Mill Scottish Oatmeal. You could substitute Irish oatmeal (the Scots won't mind) but I'm sure oat bran will work, too.

Ingredients For "highland treat" oat pancakes or waffles

  • 1 1/4 c
    whole wheat pastry flour
  • 3/4 c
    scottish oatmeal, uncooked
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt, or less (1 teaspoon specified in original recipe)
  • 2
    eggs
  • 1 1/2 c
    buttermilk, approximately
  • 1/4 c
    butter, melted

How To Make "highland treat" oat pancakes or waffles

    In a mixing bowl combine the whole wheat pastry flour, Scottish oatmeal, baking powder, baking soda and salt.

    In a separate bowl whisk together the eggs, buttermilk and melted butter.

    Combine the egg mixture with the flour mixture and stir *just* until combined
  • 4
    Heat a pan or waffle iron with a small amount of oil or butter. Measure out about 1/4-1/3 cup of the batter for each pancake or waffle; cook until golden brown on each side. Our pancakes were served with strawberry jam and butter.
