Printed on the back package of Bob's Red Mill Scottish Oatmeal. You could substitute Irish oatmeal (the Scots won't mind) but I'm sure oat bran will work, too.

1 1/4 cwhole wheat pastry flour

3/4 cscottish oatmeal, uncooked

2 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt, or less (1 teaspoon specified in original recipe)

2eggs
-
1 1/2 cbuttermilk, approximately

1/4 cbutter, melted
How To Make "highland treat" oat pancakes or waffles

1In a mixing bowl combine the whole wheat pastry flour, Scottish oatmeal, baking powder, baking soda and salt.

2In a separate bowl whisk together the eggs, buttermilk and melted butter.

3Combine the egg mixture with the flour mixture and stir *just* until combined

4Heat a pan or waffle iron with a small amount of oil or butter. Measure out about 1/4-1/3 cup of the batter for each pancake or waffle; cook until golden brown on each side. Our pancakes were served with strawberry jam and butter.
