breakfast essentials: cornmeal waffles with chili
This is a very hardy breakfast, or lunch, or dinner… up to you. The recipe gives you the ingredients to make the cornmeal waffles, it is up to you what you top them with. My choice was chili, and a nice sunny-side-up egg. FYI: Because of how these waffles are made, they can be frozen, and reheated when needed. So, you ready… Let’s get into the kitchen.

3 Tbspsweet butter, unsalted, melted

3/4 cflour, all-purpose variety

1/2 ccornmeal, yellow or white

1 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt, kosher variety

1 lgegg, sunny-side-up
- OPTIONAL ITEMS

1 tspground cumin

1 tspfrank’s hot sauce
How To Make breakfast essentials: cornmeal waffles with chili

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3Whisk the wet ingredients (milk, egg, melted butter), in a small bowl.

4Combine the dry ingredients (flour, cornmeal, baking powder, baking soda, and salt), in another bowl.

5Chef’s Note: Add the optional ingredients, if using.

6Add the dry ingredients to the wet.

7Whisk to combine.

8Allow the ingredients to rest for 10 minutes. This will give the cornmeal the chance to absorb some of the liquid.

9Prep your waffle iron.

10Add about a 1/4 cup of batter to the waffle iron.

11Chef's Note: The amount of batter used will be determined by the size of your waffle iron.
